Plastering finish for a Fireplace Hearth

We have some new flooring that will be going down and i have removed all carpet. The old owners look to have laid the fireplace hearth directly onto the carpet. so we now have a large gap between subfloor and hearth. The new flooring going in is about 8-10mm so we have been told to plaster a flat edge. I have attached a photo of what we are looking for.
