Olive trees

We have 2 olive trees and another tree at the back of our garden that require pruning back drastically and thinning out, they have got too large for us to manage and are cutting out light in the back garden. We need to bring them down to a height we can manage. We would also like the trimmings to be mulched so we can spread on the garden.
