Install rangehood in kitchen and ventilation (extractor fan) in bedroom

We would like a rangehood in our kitchen and an extractor fan in our bedroom. Kitchen: To prevent fogging up/condensation it is an open kitchen. Stove is in middle of kitchen (no wall), likely some capacity around --- cubic metres needed Bedroom: A silent ventilator (hanging on the roof ?) especially to keep us cooler with hot summer nights. Fan must be able to be regulated well. (remote controll/timer, different power) Both the rangehood and the ventilator we have not bought, possibly better for the installer to do that/advise). The vents will go through the ceiling and the roof. We live in an old wooden 1930 villa, the ceiling is 2.90 m high, then up to the corrugated iron roof.
