Noisy taps

1975 era house with original HWC and copper pipes. Cold water taps in bathroom screech loudly when turned on low, cold water tap in kitchen has full pressure when turning tap on very slowly. Hot water taps spit air intermittently. What could these issues be and what cost would be involved to fix and how long will it take to complete? I am keen to renovate bathroom and kitchen.

Various plumbing issues through out my house

We also need a new drain laid for the toilet and possibly a new gully trap if the fall to the existing gully trap is not enough for the grey water drains (vanity and shower).
