Ceiling in need of repair

Our ceiling in 2 bedrooms and the hallway is flaking and peeling and needs to be fixed. We don't want to replace the gib so are looking to plaster the ceiling instead to resolve the problem. The larger bedroom is about 3.3m x 4.6m and the smaller bedroom about 2.7m x 3.6m. The hallway is about 2.5m x 1m. We have already scraped off the majority of the flaky peeling paint in the smaller bedroom (see attached picture).
