Garden landscaping

I have an area behind the garage that requires landscaping work done on it. I am partial to having the area evened out, tiled/resurfaced and having raised vegetable patches put in it. Open to suggestions, but the end result needs to be a minimal maintenance area. I also have various areas around the garden where I have had bark put down around the plants. There are only rocks acting as borders for the bark now, and the bark constantly needs to be swept up and put back. I would like a solution to stop the bark from being scattered around. There are also trees around the house that may be suitable for removal and replaced with other plants; I would appreciate any recommendations from you.
