Rangehood replacement and old cabinetry removal

I need to get an old, non-working extractor fan above my stove removed. This one is a tilta-hood and I need all the cabinetry it resides in removed also. I need the wall where this was perhaps lined with zinc or something to cover the gap? I have a new rangehood to be hooked up and installed after that.
