Kitchen floorboard replacement

The particle board floor (under some ugly old vinyl tiles) in my kitchen needs replacing due to water damage from a leaking pipe behind the dishwasher. This section of floor goes under cupboards, oven, stove etc and joins an older section of floorboards. While I have the opportunity, I would like to replace the particle board with recycled floorboards to try and match the original floor. I think they are matai - but that would need confirming.
