Renovation - removal of walls / new ceiling and wall gib install

I have a 1960s house that I want to open up the Kitchen and Living Room area. An overview of requirements include: 1) Removal of 2x walls. Wall one appears to have been added in recent decades. Wall two appears original from the house. 2) Replace some wall gib and stop in the kitchen area and secondary living room. 3) Ceiling tile across the area needs to be replaced with gib and stopped. Total area is approximately 50m2.
