Kitchen splash-back tiling

Kitchen splashback tiling job located in newmarket. Areas are: Sink side: 1620 wide x 215 high Shelving side: 2030 wide x 530 high Tiles are 75 x 150 and I would like them horizontally laid in a grid. A shown in the pictures, the sink side has an uneven level so will need to be built up on the bottom half of the base so that the tiles sit flat. On the shelving side, I will remove the horizontal batten in the middle of the wall, but I then think the top half will need a thin backing board so that the base is the same level.
