Stove top and extractor

Job 1 - The stove top needs replacing. Are you able to purchase the item before installing please. Job 2 - Above is a cabinet with an extractor or range hood system that I've never used. It is glugged up with fat and doesn't link to outside. Could this be removed or replaced by some other internal system? I would really value some advice on this and options. It's a bit tricky because it is all within a cabinet.
