relining some walls and put in new ceiling and insulation in kitchen and living room

We removed the old ceiling in kitchen and living room and want the ceiling insulated and a new ceiling installed. Also 3 smaller walls will need to be replaced as the gib is too old to be plastered over. We want the ones facing outwards to be insulated as well. Beams are Rimu and in okay condition. They are not exactly level though. House was build 1952. We don't need quote for plastering.
