Replace kitchen sink

We need a new kitchen sink installed, and the old one removed. The details I have learned have come from some helpful staff at Albany Mitre 10, so I think I am on the right track. Our house is about 8 or so years old. We are first owners. From what I can tell our sink should have been top mounted but instead has been undermounted (who know why?). It has 2 timber rails oriented in the long direction (when transverse would have been far better), and they have sagged by roughly 10 mm, so the whole sink has dropped away from the counter top. I will attach some photos which make the situation pretty clear. I have done some looking around at new sinks, new faucets etc. My wife likes the sink at Bunnings: --- --- We want the drip tray on the right, which I guess is why they say it is a left hand sink? (the sink is on the left?). I have measured the void in our bench top and it is 725 mm long and 440 mm across. The spec sheet shows that the DinaS8S175L has outside to outside of double sinks as 647 mm long and 400 mm across, so the new sink should drop into the void in the bench top. I will attach the spec sheet. At this stage we are assuming that the faucet and waste disposal can all be re-used so no other parts are needed (other than some basic plumbing stuff)? I'd almost do the job myself, but getting the old sink out from under the sink without smashing the piping is perhaps beyond my ability. And I suspect there is some trick to sealing down the new bench? I am happy to go and buy the sink myself if that helps, but equally - maybe you'd like to scope the whole project before going ahead? At the stage we plan to re-use the existing kitch tap.
