Replace hot water cylinder attached to wetback and solar system

We have an old hot water cylinder that has stopped working and really needs to be replaced. It is currently connected to a Wetback and also a roof top solar hot water system. I want to replace it with the largest cylinder possible for the space I have, reconnect the wetback, and decommission the solar system. Job includes removing solar hot water unit from roof. Job is fairly urgent as house has no electric hot water. The cylinder cupboard is on the second floor of the house. It is a rural property with a pump to provide pressure. See attached photos - it is a bit of a mess in there.
