Sorting plumbing under house

The plumbing at our house has been altered so many times that trying to follow pipes back makes your head hurt! What I would like is for some one to come and remove the spiders web of pipes and replace with a organised system. Our house has a gas califont for water heating. After this there is shower, bathroom sink and bath, toilet/loo with small hand basin, laundry tub and kitchen sink. But looking at the pipes under there you would have thought that there were twice as many places the pipes are going. I think that this is leading to poor water pressure reaching the shower so that when you use any other tap/flush loo, the shower goes scalding hot. Happy to pay hourly rate plus parts for someone who knows what they are doing to come and sort this. Current pipes are mix of ?copper? and grey plastic with crimped fittings. At the same time I would like a extra garden tap put in and to leave blanked off pipes ready for us to add a shower (when we have consent) in what is currently a laundry room. Thank you
