Full Home Water Pipe Replacement

Our home was built in the 70s and it contains those substandard black water pipes that are notorious for leaking. The pipes are in/under the floor slab and there's no under floor access. We are losing water and have noticed wet patches appearing in one room of the house (not close to water pipes) when it's been raining heavily outside. Presumably the surrounding ground becomes saturated and the leak under the floor has nowhere to drain to, and so starts to rise. We are wanting to install new pipes to every location in the house, except for the ensuite bathroom, which has pipes run via the ceiling. We have a flat roof with no ceiling access. The contractor will have to cut into the gib ceiling and walls as necessary. We recently had the water mains entry to the house diverted to an outside tap, at the advice of the plumber, to isolate the pipe under the driveway, which was leaking. Unfortunately, because there were T junctions in the network before it made its way to the hot water cylinder, the pipe under the driveway wasn’t able to be isolated, and so it had to be capped off. The entry to the house is now in the kitchen, so with the exception of the kitchen and the outdoor tap, we want the new pipe to go to the cylinder first, and then both hot and cold feeds can go from there to everywhere else. Please allow for a new outdoor tap outside laundry. Please allow for replacing the main shower mixer and rose, as they were designed for unequal pressure, but we now have a mains pressure hot water cylinder. Would prefer a high pressure, but low water usage shower head if you can recommend one. I see products advertised as having 2x+ the pressure while using less water. However, I have never used one, so don’t know if they’re any good. Please see attached house plan with details.
