Bathroom reno

Hi there, we have our bathroom renovation starting next week and the plumber we had can't do it anymore. We need a plumber to come and "stop" the water from the shower, bath and vanity so builder can remove them and later add the new shower, bath and vanity and toilet. How much do you charge per hour? Job can be done after hours or weekend if needed. Shower, bath & toilet will stay in the same position just vanity moving it 30cm, happy to show the job. Thanks
