Plumb shower

We have a spare shower in our laundry that we currently can't use and want to get it fixed. The existing shower 1) leaks (in the wall cavity) when the shower is used 2) The water pressure is too high for the kids & 3) the mixer tap is too high for the kids to reach (currently a feltonmix). The shower is tiled but you will be able to get access via the other side of wall (I'll move the washing machine/dryer out of the way). We want to decommission the old shower mixer and install a new one & slide shower head - which we have purchased already (refer photos). Not in a hurry but would like to get it sorted sooner than later so its off the 2020 to-do-list. Cheers
