Skimming the ceiling and plastering new plasterboard

We’re renovating an old villa. We've done extensive repiling and foundations work, and it's fully rewired. We are now putting on floor linings, and are looking at plastering work for ceiling and walls. We need the ceilings skimmed in the dining/kitchen/living areas as soon as possible. After this has been done, we imagine it will take about 2 weeks to get the rest of the floor linings down and then we'll want to get the remaining ceilings skimmed and the new plasterboard will need plastering.
