I have thoroughly stripped the gib in my hallway, stairwell and toilet, and now need them plastered to a paint finish. The existing gib is in quite good condition, no gaping holes or anything like that. The stairwell is high, so you will need either scaffolding or high ladders you feel comfortable on.
