Plasterboard Repair and Sanding

We have a room in a garage that is in a bit of a state. There has been some water damage (Some of which was repaired a few years ago) but we're looking for options on replacing the damaged gib and getting a good look inside the wall (to see why/if there is any more water damage or gaps) as well as filling up any gaps and cracks as best we can. The walls and ceiling is unfinished, so also interested in sanding (We're happy to paint ourselves). We do have 2 full sheets of unused gib left as well. We ideally want to get the space in a reasonable state so we can use it to play games and such.
