New Plasterboard walls + insulation and Ceiling + Cornices

I have a few rooms in my home that I am looking at the plasterboard being replaced + bats installed underneath (if you don't know how to do the bats then I'm happy to take a swing at it). The ceiling plaster board may need to be replaced (I'll rely on your advice) then new cornices added into each room. Each room varies in size and I'm happy to look at doing room by room if you are too busy,
