Demo and regib Job

I'm renovating my 1960s house starting with the kitchen/dining room. Looking to get my walls/trims etc taken off , re-insulating if it needs it and then new gib/trim etc installed. Room is roughly 6200 long and 2700 wide and ceiling height is 2440 I believe.
