Rooms gib and insulation

Hiya, we've got 5 rooms that need gibbing and plastering. I'd like to start with the first two which is the mudroom and library, then move to doing bedrooms once we've painted and decorated those. The house is 115 year old farmhouse with sarking. We are leaving the sarking and gibbing over the top, removing a few boards to slide in the insulation. Someone who has dealt with gibbing over sarking before would be good. We are in Rangiotu, halfway between Palmy and Foxton. The ceilings will also need to be redgibbed. We have had a good plasterer in before so happy to get him back if can get the gibbing to be done.
