Hillside landscaping

We have a paddock about 18x94 metres that we would like to landscape. About one third of the area is a fairly steep hill that ends at a cliff overlooking the bay, and the rest is a large slightly sloping area. We have had sheep there for years to keep the grass down, but would like to make it more attractive using native plants. There are currently 9 mature fruit trees scattered through which can either stay or go. Our goal is very low maintenance. There will probably be some regrading involved.
