Landscaping - large rear section

We need to make changes to our large rear section to control the weeds and erosion. It is a steep area which is planted with a small orchard and some native trees and tussock but the wood chip covering is now insufficient to keep the weeds down and the erosion from water flow from the hill we are on needs dealing to. We are open to structural changes: retaining walls or use of rocks and further plantings but weed control is a must. I do already have one contractor contacting me external to builderscrack but want alternative views on the best weed control/landscaping plan.
