Backyard trees and lawn

We have multiple small and large trees that we are looking to remove from our yard and landscape to create privacy and minimise sun blockage. We also have a very bumpy backyard that is filled with moss. Assume that we have to dig up a good layer of it (will be clay underneath) and replant? Looking to rectify both issues, but not sure which one to tackle first. Looking to get quotes to help plan out how to fix this area
