Wood burner removal

I would like to have a wood burner, flue, and tiled hearth removed. Roof tiles (concrete) replaced where chimney has been removed. Ceiling inside house plastered (I have small amount of ceiling gib) I would like some information regarding the fixing and water integrity issues with removing the flue and roofing tiles , Additional small amount of roofing insulation placed in roof space where flue has been removed.
