Replace kitchen bench top

We are planning to buy bamboo bench tops from Bunnings and need assistance to install it in our kitchen. These bamboo bench tops come in standard sizes and will have to be cut according to the dimensions I have attached a photo of the kitchen and also a rough sketch of the diameters of the current kitchen bench. While we replace the kitchen bench tops we would also like to install a different kitchen sink. In addition to the kitchen bench top we have a freestanding kitchen island which we also like to put a bench top on, however due the the width of the bamboo bench tops from Bunnings (600mm) two of them will need to be fixed together for the freestanding island which will be around 1000mm x 1300mm.
