Fixing cabinetry above fridge and adding skirting

We have a space above our fridge where the original cabinetry was moved to fit a new fridge. We would ideally like to have the tall side panel (first photo - this goes all the way to the floor in a single piece) replaced so it reaches to the ceiling, then the box shelf moved back slightly and have double doors fitted across the front of the shelves, also up to the ceiling . The coving makes it slightly tricky to get to the ceiling, but what we would like is for the coving to come out and go around the front of the cupboards. We have similar shelving built in in the attached family room, so it would be nice to make it match with the coving going around the top of the cupboards (see second photo).
