Under house garage extension and granny flat

I would like to convert my existing under house garage into a self contained single bedroom granny flat with all the basics like kitchenette, small lounge, bathroom, laundry and bedroom. This garage space is quite large, easily double+ size. The house sits on top of the garage and there is another large space under the house (next to the garage) that I want to excavate and turn into a double garage with cinder block work or similar. This space is partially open under house space and I am currently using it as a workshop/storage area. There will need to be some supporting beams installed to replace the house piles I would imagine - I would need direction and advice as to how to proceed. Building and resource consenting will need to be done as well as have a draughtsman do up the plans etc. I'm not extremely clued up with this level of renovation so I would really be following the advice of the builder/draughtsman. I am a drainlayer so I would be able to add value in that regard. I would also get involved with any labour intensive tasks like GIB work and painting etc to keep cost down. I will also take care of excavation spoil removal, I have access to machinery and tip trucks etc. I don't have specific timeframes but would like to kick things off sooner than later, especially the planning and consenting stage.
