Internal walls and shelving

We are looking for a qualified builder. Our villa has been previously converted to convert 2 adjacent rooms into a more open space (there is a central fireplace with space either side where you can walk between rooms - see photos). We would like to convert the rooms back into 2 separate rooms by filling in the 1.5mx2.5m spaces either side of the chimney with walls/shelving. We are looking for a qualified builder to build the walls on either side of the chimney. On one side of the fireplace, we would also like to build in-built shelves in both the rooms.
