Ceiling and insulation

We'd like some insulation installed between the exposed beams under the roof in our living/dining area, and then some jib panels or similar nailed onto the beams to form a ceiling. Other suggested solutions are welcome. The highest point of the ceiling is five metres from the floor. We'd like the job to include plastering, but we can take care of the painting.
