Remove kitchen and convert to bedroom

We are looking to remove our current kitchen and two closets to convert into a single bedroom. This would involve constructing a new wall and preparing the room ready to paint (we can do the painting). Hoping to have this done around mid-August. Pictures of the current kitchen and storage closet (which would be the entry to the new bedroom) attached for reference. Also included rough floor plans. If you have your own plumber and electrician that you would prefer to work with, would be keen for an overall itemised quote to compare to our own trades.
