Ceiling replacement

The old ceiling panels in the bathroom (not sure about size, would say about 2.5m x 2m) and hallway (about 1m x 4.5m) are bowed and need replacement. We had some people check the roof, but they could not determine if the bowing was due to a leak from the roof or old age. We are looking to replace the old panels with aqua line gib board sheets in the bathroom, and standard gib board in the hall way. The ceiling panels in other rooms may also benefit from renewal. They have some mould, but they are not bowed. We need advice whether they need replacement or if cleaning will solve the problem for these.
