Kitchen splash backs Rochester St.

I have 2 splash back areas to be tiled between the benchtops and overhead cabinets. The combined area is 3.9 m2. I have purchased subway styled tiles 6.5cm x 20 cm. I am after dark grout that can be sealed or something like that, that will mean it won't look greasy behind the hobs. The walls are painted gib and are in good condition. Our kitchen is scheduled to be installed on 30th March so looking for a tiler who can look at doing job ideally in week beginning the 6th April. Thanks.
