Kitchen wall tiling

Wanting to tile a kitchen splash back that requires some cutting work around windowsills and power outlets above a kitchen bench. The wall is uneven - unsure if this is something that a tiler can deal with or whether we need to have it levelled prior to you staring job. I am yet to buy tiles so happy to take your advice on the dimensions I should purchase. Would love to have done by Christmas. Attached photo shows the area to be tiled and extent required: from left to where bench ends below old meat safe, right to wall/cupboards and top to cover old power point holes.
