Tiling in new kitchen

Need tiles laid in newly installed kitchen. Area above sink and around window (which is above sink)...approx 1700mm length. Under window area is about 200mm high...then beside window on and wall at right angle to bench, about 300mm high. The tiles will reach around to end of bench, so that's about 600mm (tiles will be in a "L" shape). The long part of the "L" being the area under window, above sink. Also need same design on wall at end of breakfast bar. 900mm wide, approx 300mm high. Wanting subway tiles laid in 'brick' pattern. Hoping to have job done in next couple of weeks. We have an old house with walls that are not plumb, so experience in old properties and how to manage the less than perfect nature of the walls is a must. Photos show the kitchen in a more unfinished state than it is currently in. All plumbing and electrics are done, last job we need assistance with is the tiling.
