Resurface Kitchen Benchtop

Our kitchen benchtop has been pretty good for at least 15 years but now there are a range of cuts and the varnish has pulled away and there is a small amount of moisture ingress. We'd like to have it resurface. Possibly the easiest way is to remove and resurface it completely but open to thoughts on this. Attached a few photos of the bench in its normal arrangement and with everything on it lifted as well as photos of some specific damaged areas. Ideally looking to complete this by late Jan or early Feb.
