Install new sink on kitchen bench

We have a new composite sink that we want to mount on our stone kitchen bench. The current sink (undermount) will need the plumbing removed, before it's taken out, then mount the new sink and reinstall the plumbing and insinkerator. Current cutout on the bench is --- however this need to be extended to --- to fit the new sink. Ideally looking for someone who can do the whole job themselves, including cutting the bench and the plumbing etc. We have got the new sink and parts, plus a new tap to be installed on it.
