Move kitchen tap and sink waste

A flood in the kitchen has damaged our existing cabinetry and we are taking the opportunity to replace them with a new kitchen. We would like to put in an on-bench tap rather than the current upstand mounted wall tap, so would like a plumber to relocate the tap connections into a cupboard underneath the new sink. This tap connection will need to also include a hook-up for the dishwasher. As the sink is moving ~40cm from its current location the location of the sink waste pipe also requires moving to underneath the new sink cupboard. An additional small task while here is to shorten an overly large pipe (plastic, not copper) on a tempering valve under our hot water cylinder. The existing cabinetry and sink is currently in place, and we can discuss when the best time to move it out is.
