Install new water system

We are looking to replace an old hot water system where the water comes from a gravity fed tank. Ideally we'd like to put in an infinity but not sure this is possible. We are also replacing the kitchen and bathroom so plumbing for those rooms need to be looked at. We would ideally like to get started on this work ASAP once the Covid 19 Alert level reduces
