Change kitchen taps to a mixer

We currently have kitchen taps coming out of the wall and want to change to a mixer that comes out of the bench. Ideally it would be done next week sometime but we need to know at what stage between ripping out old unit and putting in new unit/sink that a plumber needs to come :)
