Prepare Hot/Cold Pipes for Renovation (ASAP)

We are currently renovating our kitchen and our arranged plumber has fallen through. We are working on a reasonably tight time frame now and are looking for a small job to be completed ASAP. We need to prepare the hot/cold lines for plastering next week. Currently the cold line is capped just above the floor while the hot line is capped in its old position half way up the wall. We need to have both the hot and cold lines raised/lowered to protrude just under the new bench so that we can plaster around them. Copper pipes. Easy wall access (walls being removed). Further work down the track is possible. If someone where able to complete this afternoon (Fri), anytime over the weekend or Monday afternoon would be great.
