Fix holes in a ceiling

We had the bathroom upstairs leak into the bedroom below. A plumber came to fix this but now there are a few holes in the ceiling which need to be fixed. One of the holes is right under the U bend from the bath upstairs, so it would be good to have some sort of trapdoor there in case it ever needs to be accessed again. The sheet of gib or whatever it is will need to be replaced as it's gone soft in places.
