landscape design, construction and planting

we have a couple of areas we need help with designing the planting and then constructing some fencing, planted spaces, transplanting some plants and planting some news plants. the first space (hedge picture) we will just need clearing (transplanting some of the plants elsewhere) and then turning it into a mowable lawn area with the transplanted plants going in to the second space(mentioned next ) and putting up some 3-board fencing in one part of it to replace farm fence and continue what is already there. The second space, two pictures with decking and lawn area and tables is in and around our business building and we would like some advice on what we could do that is easy care, pretty and hardy all at the same time and using the plants we have taken out in space one to make use of them (roses that I would rather not lose as they are heirloom and very pretty). The third space is our veg garden space that needs a clean up, more beds putting in (we have the beds from future posts) and making the space around them easy care, weed free, maybe even decked/pebbled? Probably about 1 months work all told. The bones are there it just needs tidying up and made easy for us to keep up the good work once done.
