Gas Hob Install

I am looking to install a gas hob, to replace the electric job currently in place.
There is no current gas pipe work in place, so this would need to be installed.
I would be looking for the pipe work to run down under the floor of the house, and come out a few metres away, with maybe 5m of pipe work in total.
Ideally the install would support 2x 9kg bottles with an ability to switch over when the pressure in one bottle became too low.
No specific timeframe in mind currently.
I am yet to source the stove top, so guidance on whether I need to have this available prior to the work being completed would also be useful.
