Floor sanding/varnishing in Kitchen/Laundry

We’re about to renovate our kitchen & laundry and would like to remove the vinyl flooring and sand/polish the wooden floors underneath (possibly Matai). The area is approx 18m2. See photos attached of the bare floors, currently covered by vinyl (2.5yrs old). There was flooding in the laundry 2.5yrs ago and the photos were taken at that time. Please include vinyl removal in your quote but separate from floor sand/polish/varnish. We’d like satin finish on the floors.
