Laying down a new floor in our kitchen

We have all the pieces of a laminate floating floor from my parents huge kitchen and dining that we want to install in our small kitchen / laundry, and a small piece in front of the front door. We also have the underlay. Their floor was only 2 years old so it's in excellent condition. The area would be around 15-17sqm at most. We would also need the current vinyl floor taken up. What we don't have is the little edging bits. We really don't want to glue the floor down. We are in no rush so this could be a great option for a random free day and we can work around your schedule.
