Fence and gate replacement

I need a wooden fence and pedestrian gate built to replace an existing one, but in a different position. About 15m total length including the gate, it has a couple of angles around a courtyard. Starting with one length (including the gate) of about 5.5m to the first corner, then a 3.6m length at 90degrees, then another 3.6m at about a 45 degree angle, then the rest at another 45 degrees - and joining the old fence line.
I would like the fence palings to be really tight together, and maybe even tongue and groove, and with not too many knots, so I can paint the fence a glossy off-white.
The tallest part of the fence will be 1.8m, but there’s a slight slope so some of the fence and the gate will be shorter - say about 1.5m high approximately.
I want to be 100% sure that the gate doesn’t sag over time.
The existing fence and gate (about 10m) needs to be taken down and removed.

(There’s another section of fence and a gate to do as well, as an extra job. It’s about 5m of fence and a pedestrian gate.)
